Free Company, a group of three chefs, will be cooking at The Endurance in September. We're seeing more an more of the 'guest chef' takeovers; in fact it's becoming far more popular than things that can be described as pop-up restaurants, and it gives great chefs access to existing customers in spaces that have all the necessary equipment. Free company will offer a changing lunchtime menu, an evening bar menu, and ticketed Saturday night dinners.
"During the month of September, The Endurance will play host to the newly formed Free Company. The trio is comprised of David Boycott, Billy Stock and Josh Rhodes and aims to bring inventive, modern British food to Berwick Street.
The company boasts an eclectic culinary experience, with David and Josh having studied at Oxford University before making their way into the industry; Josh via a stint at an investment bank before leaving to set up the Turl Street Kitchen in Oxford, a social enterprise restaurant.
David currently works at Opera Tavern, part of the Salt Yard Group, having started there several months after leaving university in 2011. He accidently became obsessed by the culinary world whilst studying and hasn’t been able to turn back since.
Billy worked at Salt Yard as a Chef de Partie, where he met David. He has proven himself a technically strong and creatively gifted chef during his time there, placing third in last year’s Young Spanish Chef of the Year.
The kitchen will be headed by David, though all menus will be a strong collaborative effort between the three of them. They prepare to cook their own brand of food, influenced by modernist techniques with a strong respect for the bounty of Britain’s produce. They know they are far from the complete article, but they will be putting their very best on show for Soho’s discerning public."
