British Lion eggs & Simon Rimmer's Sunny Side Up Pop-up Cafe in Drury Lane


The Sunny Side Up Pop-up Cafe will open for one (long) lunchtime only in Drury Lane, near Covent Garden, to promote the joys of eating eggs.  Launched by British Lion eggs, Sunday Brunch's Simon Rimmer will be in the kitchen, and Instagrammer Giulia Mulè aka MondoMulia will be taking two classes on how to take better food pics.  It's open on Wednesday 25th January 2017, 11am - 3pm only, and each of the dishes - like the egg and chorizo casserole below - will cost just £3, with proceeds going to the Alder Hay Children's Charity.  Be there!


"British Lion eggs is teaming up with celebrity chef Simon Rimmer to brighten up Britain with the launch of a ‘sunny side up’ pop-up café, open to the public on Wednesday 25 January 2017 in Covent Garden, London.
Simon Rimmer has created a collection of healthy one-pot egg dishes, showcasing the ease, versatility, speed and nutritional benefits of cooking with eggs, which he will serve at the retro pop-up. The café will help to counter the dreaded January blues by highlighting eggs as an affordable protein, giving your health, mood and wallet just the ‘pick me up’ it needs.  
Eggs are a natural source of protein, vitamins and minerals.  A medium egg contains fewer than 70 calories and is naturally rich in vitamin D, which a lot of us lack in the winter months because our bodies can make little vitamin D when daylight hours are short. Eggs are also an excellent source of vitamins B12 and vitamin B2 (riboflavin) and a source of vitamin A, as well as containing essential minerals and trace elements, including phosphorus, iodine and selenium – all helping to boost nutrient levels at a time when they may be sorely needed.  
Simon Rimmer says, “One-pot egg dishes are the ultimate go-to recipes for anyone wanting to make quick and healthy meals. Whether you’re a chef like me, or a novice in the kitchen, these recipes will have you feeding your friends and family like a pro and if that’s not a mood booster, I don’t know what is!”
The café promises to be the most ‘eggstagramable’ pop-up to date, with masterclasses by the popular food blogger Mondo Mulia, sharing her tips to get the perfect egg Instagram shot. 
For £3 a dish you can try any of Simon’s #onepoteggs listed below. All profits from the café will be donated to Alder Hey Children’s Charity.
