Jersey's Bohemia Pop-up at The Dorchester in Park Lane


In May Shaun Rankin, the head chef from Jersey's Bohemia restaurant, will be cooking at The Dorchester for one week to promote produce from Jersey and the other channel islands.

"Head chef Brian Hughson invites Bohemia’s Shaun Rankin into his kitchen to bring a flavour of Jersey to the capital.
From Monday 14 to Saturday 19 May 2012, Michelin star TV chef Shaun Rankin will team up with Brian Hughson at The Grill at The Dorchester bringing Jersey to London.
The menu will offer predominantly Jersey produce such as new season Jersey asparagus and potatoes, Jersey scallops and lobster, as well as new season lamb from the smaller Channel Island of Sark, and Guernsey Fort Grey cheese. Sample menu highlights will include Shaun’s signature dishes: New season Jersey asparagus, three hour cooked duck egg with morel mushrooms and herb sabayon; Warm Jersey lobster with a crab & fennel ceviche gratin of saffron macaroni; Slow cooked belly and spiced glazed cheek of pork, sweet potato and orange, local Jersey calamari; and his winning Treacle tart with Jersey clotted cream ice cream, which wowed the judges in BBC Two’s Great British Menu.
Rankin has been instrumental in championing Jersey produce since 2006 when he was named British Chef of the Year by the Independent. At the Michelin starred Bohemia, part of The Club Hotel & Spa in St Helier, he enjoys a close relationship with local suppliers, foragers and producers. Shaun has lived on the island for 18 years and calls Jersey his own ‘nine-mile long kitchen garden’. His dedication to provenance and the cuisine of the British Isles forms a central axis around which a diversity of influences accrued from his experience in America, Australia and the UK, revolve.
The Grill at The Dorchester is renowned for showcasing the best of modern British cuisine made with the finest ingredients from Scotland, Devon, and Cornwall.
