Tacos Padre at Borough Market Kitchen


Tacos Padre is a pop-up at the Borough Market Kitchen, featuring chef Nicholas Fitzgerald's Mexican cuisine.  It's open from Thursdays to Saturdays until the 10th October (at which point it will become too cold!).  On Thurdays to Saturdays there is a daytime taqueria and shop, and on Friday and Saturday evenings it becomes a fully fledged restaurant with bigger dishes, and even desserts.  Hurry - only a few more weeks left!


"Now open at Borough Market is Tacos Padre, a taqueria from chef Nicholas Fitzgerald, who has previously worked at Pujol in Mexico City (12th on the World’s 50 Best list), as well as Breddos Tacos and The Mexican restaurant at Annabel’s in London.
During the day, the focus is squarely on tacos, which include: Beef short rib suadero – with aged beef fat morita salsa, onion, and coriander; Pork cochinita – with habanero onions; Cauliflower al pastor – with toasted coconut and salsa macha; and Chicken with black beans, salsa guacamole. There are also sides of grilled corn with Pasilla Mixe, and red guacamole with tortilla chips.
The weekend evening menu expands things greatly with a menu of snacks and larger plates to share. Smaller dishes include crab tostada with guajillo and tamarind; Baja-style fried fish tacos with white cabbage and fennel, morita, and oak smoked cod's roe emulsion; Green gilt head bream ceviche; and Iberico presa al pastor, with burnt habanero pickled pineapple.
Larger dishes to share are served with tortillas and salsa: Cauliflower Al Pastor with Avocado, Toasted Coconut and Pumpkin; Whole Grilled Brill with English Peas and Jalapeños; Crispy Pork Carnitas, pork glaze, Xi-Ni-Pec; and smoked suadero short rib with Burnt Onion and Pomegranate. And for dessert, there’s Mint Margarita Paletas, and Burnt Peach with Tepache Granita.
Key to Nick’s approach at Tacos Padre is using the best ingredients available and making as much as possible from scratch. Suppliers include the Ginger Pig; Fin & Flounder; and Avocargo – the best avocados in the UK. All salsas, rubs and sauces are made in-house daily and are used to marinade meats and garnish tacos.
The taqueria is open Thursday - Saturday daytimes, and the evening menu is just available on Friday and Saturday nights."
