Blanch & Shock's Residency at The Endurance in Soho


Having popped up over the years at different events and one-night-onlys (including a Burger Monday), the excellent Blanch and Shock have announced a new residency at The Endurance in Berwick Street where they will cook for most of August, including 4 ticket-only Saturday night dinners.

"After four years of cooking in tents, warehouses, offices, fields and trucks, we have found a temporary home at The Endurance on Berwick Street in Soho. For the month of August, we will be cooking small plates for lunch, revisiting and simplifying dishes we have made over the years. On Saturday nights, we will hold ticketed dinners consisting of longer tasting menus, new dishes and collaborations with guest chefs and producers. We will also be cooking a small menu of snacks at the bar
As ever, we will source the best seasonal ingredients possible, with meat and vegetables from small scale producers, sustainable fish and wild foods. Our menus will change throughout the month as the summer's ingredients change.
The dinners on saturday nights will be inspired by foods from the four compass points. The calendar and guest chefs are as follows.
August 11th - The North- Blanch & Shock
August 19th - The East - Andrew Stellitano
August 26th - The South - David Boycott
September 1st - The West - Blanch & Shock

Blanch & Shock's Residency at The House of Wolf in Islington


Culinary innovators & frequent pop-up hosts Blanch and Shock Food Design are very busy these days.  They're behind the Secret Restaurant at the current Secret Cinema shows, and they're also in residence at House of Wolf in Islington until 1st December.

"Blanch & Shock will be the chefs-in-residence at House of Wolf, formerly a historic music hall, newly renovated and housing an experimental cocktail bar, a live music venue, a restaurant and private dining rooms.
We shall be cooking a set menu of five to six courses and some snacks. We will source ingredients from small producers, some of whom can only supply small amounts of food, and so the menu will evolve to reflect that."

Blanch & Shock's One night Pop-up at four o nine in Clapham North


Experimental chefs, and stalwarts of the London pop-up scene Banch and Shock are cooking at four o nine in Clapham North on Wednesday 23rd July.  Blanch and Shock are serving a five course tasting menu, with such treats as crab tart and smoked mutton, and tomatoes, strawberries and parsley - full menu here.  It's going to be pretty special!

"We are delighted that the next Pop Up Chef will be Blanch & Shock, cooking up a storm in our four o nine kitchen.
Blanch & Shock Food Design make creative food projects and provide bespoke catering. They use food to explore and illustrate ideas, focusing on the British palette of ingredients.
Mike Knowlden & Josh Pollen are based in South London, they design food for diverse events and projects across the UK and beyond. These have included concept-based canapé services, multi-course dinners, tasting experiences and edible installations, pop-up restaurants and singular artistic projects.
They will be taking over our kitchen for one evening."

Guerilla Science & Blanch & Shock's Brain Banquet in Dalston


For 3 days this March experimental food pioneers Blanch and Shock (earlier) are producing a 5 course dinner called the Brain Banquet, taking place within a derelict bunker in Dalston, E8.  The food will be amazing, and beyond that you have installations about the brain to explore, plus scientists to explain and discuss elements of the mind throughout the evening.  Even more intriguingly the instructions say to dress in warm clothing, and with waterproof footwear...

"Feast your senses this coming March on the most complex thing in the universe: the human brain.
From March 13 -15, Guerilla Science will transform a surviving World War Two bomb shelter into a Brain Banquet, a unique 3-day pop up dining event taking place in Dalston, East London. The derelict bunker will become a temporary world where guests will enter into an incarnation of the brain to explore with all their senses. A limited number of tickets will be available each night, featuring a five-course dining experience created by food designers Blanch & Shock.
"The brain is an endlessly intriguing subject and this is the perfect opportunity to bring food and neuroscience together,” says Guerilla Science Director Jen Wong.
“We are fascinated by the peculiar ways in which memory, perception and association alter how we experience food,” says Josh Pollen, from Blanch & Shock. The banquet will explore a variety of functions of the brain, ranging from memory and smell, synaesthesia (a condition where two senses are entwined), delve into the chemistry of the brain, and explore the aesthetics of the cerebral cortex. For daring diners, it will culminate with the serving of real brains. “Guerilla Science make it possible for people to access knowledge normally confined to laboratories,” says Pollen. “As cooks and designers with no formal scientific background, we have had the privilege of meeting with neuroscientists and surgeons who have given us insights into the functions of the brain.”
Eminent scientists will accompany the meal to discuss different facets of the mind: Dr Felicity Callard of the University of Durham will join Dr Daniel S. Margulies of the Max Planck Institute for Human and Cognitive Brain Sciences to uncover the brain’s networks and how these relate to creativity. Neuroscientist Professor Anil Seth of the Sackler Centre of Consciousness Science at the University of Sussex will reveal what science can (and cannot) tell us about consciousness. And neuropsychologist Dr Vaughan Bell of King’s College London will discuss what happens when the mind deceives us: hallucinations and delusions.
There will be five installations for the public to explore in the lead up to the banquet. In the Memory Clinic, a maze of test tubes designed by Broqwiem in collaboration with Guerilla Science, guests can share their memories. Another room will house a giant brain created by artist Agatha Haines which explores the possibilities of creativity through unorthodox brain stimulation. The Sonic Tour of the Brain will reveal what the brain sounds like. Preserved animal brains and heads on loan from the Royal Veterinary College will illustrate the evolution of the mind. A roaming magician will serve up visual illusions as mental aperitifs.
“The multi-chambered bunker provides a unique and atmospheric setting”, explains Guerilla Science Director Jen Wong. “The association of bunkers with protection and defence and a command and control centre lies behind our interpretation of the space as a ‘brain’.”"

Blanch and Shock's Nose-to-Tail Dinner at The Russet in Hackney


Bespoke caterers Blanch and Shock are back at The Russet, where they appeared in December, for another 4 course feast, this time on a very meaty theme.

"As part of Nose-to-Tail Fortnight, organised by Ethical Eats, we shall be cooking a special dinner at The Russet in Hackney Downs Studios. We were recently given a massive wild boar head, which we will break down and serve in various preparations along with other less-used cuts. There are 24 seats at our table and dinner will include four courses and snacks."

Blanch & Shock's Pop-up Winter Feast in Hackney - NOW FINISHED



Bespoke Caterers Blanch & Shock are holding a four course feast in Hackney on 22nd December.  They're taking over The Russet in Hackney Down Studios for the night, to cook a Christmas dinner without a turkey.

"The last food we shall cook this year will be at The Russet, a new café opening this week in Hackney Downs, a new venture for Steve Wilson - Blanch & Shock associate chef and founder of The People's Kitchen at Passing Clouds.
We will be cooking four courses, and a few snacks at either end, and Steve will be running the bar. The menu will be not be a traditional Christmas spread but will instead serve to glorify the winter ingredients that remain despite the cold. There will be no turkey...
There are forty seats available at our table.
They cost forty pounds.

The 'Nuclear Winter' Immersive Pop-up with Dining, Bars & more in Tottenham Hale

Nuclear Winter is an immersive pop-up experience at STYX in Tottenham - next to Tottenham Hale station - running from 29th November 2017 to the end of February 2018.  Based on the 1960s, and the film Dr Strangelove, it has themed bars, a cabaret, and events, and will feature food from pop-up pioneers Blanch & Shock in December, then Kino Vino in January, and chefs curated by Grub Club in February.  Dining tickets are just £55, or you can get in for just £5 (which also get you a free cocktail).

Running from November to February - Nuclear Winter is a yuletide festival with a cold war flavour! From Russia to America and back through Cuba we’ve got it all to make your Christmas period go with a bang.

Baileys' Bar Chocolat Pop-up in Covent Garden


Baileys is hosting a special Chocolat(e) bar in Covent Garden from 11th - 16th September, where you can explore exhibits like video installations and works by Bompas & Parr, and diners can enjoy dinner and lunch cooked by Blanch & Shock.  Tickets cost £17.50 for lunch and £25 for dinner, but you can visit the exhibition for free.  NB - Over 18s only.

"BAILEYS is bringing its new innovative liquid Baileys Chocolat Luxe to life this September with Bar Chocolat - an immersive, multi-sensory experience inspired by the pleasure of chocolate. 
Bar Chocolat, open to the public from 11th – 16th September in London, will see handpicked visionaries Bompas & Parr, Tabitha Denholm, Petra Storrs, Amelia Rope, Lou Hayter and Blanch & Shock join forces to create a sensory journey in taste.
The Covent Garden space will feature a large-scale edible art installation created by Artisan chocolatier Amelia Rope and stylist Petra Storrs, a Bompas & Parr scent and flavour experience, music director Tabitha Denholm’s first-ever video installation and a musical collaboration from pop ingénue Lou Hayter. 
Petra Storrs - who has created memorable costumes and staging for the likes of Lady Gaga, Paloma Faith and various fashion shoots – will be creating an elaborately staged bar space that will provide a beautiful homage to the drinking experience, adding theatre to the first time that visitors sip Bompas & Parr’s Baileys Chocolat Luxe Rococo Serve.
Over the course of the six days, a series of ticketed events will see a unique experimental supperclub from Blanch & Shock take pride of place. Combining theatre and innovative cuisine, the three-course dinner laid directly on to the long U-shaped table will see 30 diners enjoy a series of gastronomic delights at each sitting. 
Baileys Chocolat Luxe is the first time that real Belgian chocolate has been fused with alcohol in a way that delivers the multi-sensory experience of chocolate in a glass.
The public can enjoy free entry to Bar Chocolat the public by registering for limited tickets."

Lidl's Free Mussel Beach Pop-up in Spitalfields


For four days Lidl will be paying homage to Scottish mussels in a 'Mussel Beach' pop-up at The Old Truman's Brewery, off Brick Lane.  It's free, but you need to book a time, and it takes place from Thursday 15th to Sunday 18th September 2016, as part of their #LidlSurprises campaign.  The chefs are Blanch and Shock, and there are also intereactive experiences to enjoy.  Get your tickets from Yplan now!

"Lidl is set to pay homage to the fascinating Scottish mussel in an interactive culinary playground that recreates a taste of Scotland’s Isle of Mull in Brick Lane this September.
Inspired by the peak of the mussel season, which runs September to March when British mussels are at their best, ‘Mussel Beach’ will recreate the stunning scenery of the Isle of Mull, where Lidl UK sources its mussels. Bringing the Isle’s Loch Spelve to the heart of London, experimental chefs from Blanch & Shock will be creating recipes using the mussels, which have been sourced straight from the Loch’s ‘A Grade’ waters, for guests to experience the diversity of the produce.
Situated just off Brick Lane, Mussel Beach is free and open to the public to explore from Thursday 15th to Sunday 18th September. On arrival at Mussel Beach, guests will be given the opportunity to gaze at the beautiful Isle of Mull’s starry night, recreated using Kinect technology*, whilst suspended on swings made from the very ropes used to catch mussels – before walking across a jetty to pause for reflection in Lidl’s very own lake, which incorporates water sourced directly from the Loch itself.
With one serving of this mouth-watering mollusc providing a third of our daily iron requirements, this seafood superfood is an often underrated ingredient in British homes. In the past year however, Lidl has seen a 40% increase in sales of its Scottish mussels, as consumer tastes increasingly turn to sustainable seafood options.
Lidl’s interactive experience pays tribute to this affordable yet luxurious shellfish, which the supermarket sources straight from the Scottish Isles. The rope-grown mussels are Marine Stewardship Council (MSC) certified, meaning that the molluscs are sustainably sourced. In fact, Lidl UK was recently named the MSC’s Mid-Sized Retailer of the Year, further reinforcing the supermarket’s sustainability credentials.
Not forgetting the tasting experience, cutting-edge culinary masters Blanch & Shock will be creating five unique recipes, including a dish that recreates the landscape of the Isle of Mull, using toasted oats, parsley, lemon and garlic, all within the shell of the mussel. All of the quality ingredients used to develop the delicious recipes at Mussel Beach is readily available from Lidl stores nationwide."

Blanch & Shock's Dinner at the West Norwood Slow Food Festival


Blanch & Shock are a couple of very skilled chefs, who have popped up at a number of events before, including at the Circus 11 Christmas Fashion Market in December, where I met them and enjoyed some of their very delicious ice cream, made 'Heston style' with liquid nitrogen.  Now they're cooking a whole dinner, for one night only, as part of the West Norwood Slow Food Festival - it should be great!

"We shall be cooking a dinner in St Luke's Church as part of the West Norwood Slow Food Festival on Saturday, March 31st. The dinner will feature traditional preserving techniques such as fermentation, pickling, culturing and curing and we aim to source ingredients produced as locally as possible. 
There will be four courses and some snacks, and tickets are priced 35 pounds.

Kitchen Party Pop-up Dining in Clerkenwell


Kitchen Party is a new space for Summer 2013 featuring a number of innovative pop-ups or dining experiences under one roof, including Dine Mile High Club (of Destination Gothenburg), Russian Revels, and Blanch & Shock.  It opens on Thursday 9th May, just off Exmouth Market, and then will be open every week, Thursday - Saturday.

"Curated by Bourne & Hollingsworth, Kitchen Party’s mission is gather some of London's most exciting chefs and culinary entrepreneurs collaboratively for the first time in one space, under one roof.  
Featuring a rolling programme that welcomes up to five temporary dining (and drinking) experiences at a time, changing every four to six weeks, Kitchen Party will feature some of the biggest names in cutting edge food, including the critically acclaimed Blanch and Shock, The Robin Collective and Rack & Ruin, as well as interactive installations such as Russian Revels and the Dine Mile High Club. The venue will also feature the 4th Wall, London's first wandering bar.
Turning the typical dining tradition playfully on its head, Kitchen Party will in fact be a collective of three or four ‘restaurants’ in one - a menagerie of multiple experiences, tastes, flavours and sights – offering guests something wholly unique each time they visit."

The Experimental Food Society's 'Food & Fragrance' Banquet at the InterContinental Park Lane

The Experimental Food Society hold their annual exhibition in November - full listing here - and as a finale hold a two night banquet, this year co-created by Blanch and Shock.  It's not cheap - £90 per head - but I think you can safely say that it will be delicious and very memorable!

"A ‘Food & Fragrance’ themed banquet, featuring a five-course menu created by Food Designers Blanch & Shock, Experimental Psychologist Professor Charles Spence and Food & Fragrance Artist Louise Bloor in collaboration with Paul Bates, Executive Chef at the Cookbook Cafe at Intercontinental London Park Lane.
The menu looks to highlight the sense of smell harnessing it to not only demonstrate how intrinsic it is to our enjoyment of food but in heightening it.
Diners can look forward to a progressive menu serving the best of British produce with dishes such as ‘Duck in the Woods’ featuring wild, dry-aged mallard duck, terrine and onion leaves cooked in dark beer and dehydrated served atop a platter taken from the forest floor and impregnated with scents such as juniper wood and moss and accompanied by roaming branches doused with gun oil. 
Other courses include Cox apple compote with fried sponge cake and chamomile Chantilly, served with guaiac wood sorbet, lemon verbena sherbert and begonia blossom accompanied by an inhalable blackcurrant bud absolute served as a breathable cloud.
The banquet will be accompanied by a range of interactive food experiences and accompanied by a tailored soundtrack courtesy of The Broken Hearts. 
There will be a wine pairing option available to guests on the night, as well as a cocktail menu designed specially for the occasion. This is in addition to a fully stocked bar. Drinks come at an additional cost."

The Waldorf Project art performance event in Hackney


The Waldorf project is a very ambitious art performance and food event coming in October, conceived and directed by Sean Rogg.  Food is to be provided by Andrew Stellitano, and Blanch and Shock.  It's going to be a huge operation, with a price to reflect that.

"The Waldorf project is an art performance that will create an immersive experience on a grand stage intended to connect the senses through food, drink, dance, sound, and environment. It is a continuation of an art practice involving food and drink that artist Sean Rogg has been exploring for many years.
Each chapter will have a theme, which will act as the inspiration for the various aspects of the performance.
The first chapter will run for 5 nights with 40 guests per night. Lasting Approximately 3 ½ hours.
Key to this concept is the synergy between the various aspects of the event and the imaginations of the creative team. A food designer, Chefs, a choreographer, a sommelier, a production designer and a sound designer, all being directed and connected by Sean Rogg.

Edible Cinema Presents Valentine's Screenings of Some Like It Hot in Shoreditch

Edible Cinema is a film experience where you eat specially created food while you watch.  Previous screenings have included Spirited Away and Beetlejuice (for Halloween).  Now they're bringing us Some Like it Hot for Valentine's week...  These sell out amazingly quickly; tickets go on sale on Thursday 31st January, and if you want to go put a reminder in your diary!

"On Sunday 17th February Edible Cinema, in partnership with Bombay Sapphire, will be showing two screenings of Some Like It Hot at the Aubin Cinema in Shoreditch. 
Hailed as one of the funniest films of all time, Some Like It Hot is the ultimate ‘Rom Com’, an iconic film peppered with classic one-liners and featuring Marilyn Monroe in one of her finest roles. Valentine’s Edible Cinema is perfect for those who want to treat their loved one to an alternative romantic date or to enjoy with a group of friends.   
Following Secret Cinema, scratch and sniff cinema and film scores re-imagined by DJs and musicians, Edible Cinema takes the experience into a new realm. It is a collaboration between Soho House, renowned  event organiser Polly Betton, experimental food designers Blanch and Shock and Bombay Sapphire mixologist Sam Carter. Two multi-sensory screenings of Some Like it Hot, Billy Wilder’s screwball comedy, will be enhanced by Edible Cinema’s integrated tasting experience.  
Edible Cinema is a unique way to experience a film: through aroma, texture and taste.  On arrival, guests will be served a  Bombay Sapphire  Colonial Cocktail, a variation on the ‘Colony Cocktail’ invented during the Prohibition era of the 1920s when the film is set. The  combination of  grapefruit juice and  dry cherry liqueur combine to create a delightful rose taste. Each guest is then supplied with a tray of numbered mystery boxes containing a bite-sized tasting menu tailored to specific moments in the film. A number corresponding to a parcel is displayed just before the crucial moment, signaling guests to get stuck in and enjoy the edible treat. 
Billy Wilder’s  legendary romantic comedy sees jazz musicians Jack Lemmon and Tony Curtis escape the Chicago mob by disguising themselves as women and joining an all-female band who are on their way to perform in Miami. Marilyn Monroe plays ‘Sugar’, a troubled singer who gets caught up in the two musicians’ lives, and hilarity ensues. Guests can eat their way through the film's classic backdrops, from icy Chicago to the sunny Miami seaside - as the flavours, smells and textures underscore the action on screen.  Highlights include a ‘fuzzy lollipop’ when Sugar confides in Geraldine that when it comes to men she always gets ‘the fuzzy end of the lollipop’ and  ‘Champagne kisses’ consisting of smoky, booze-soaked truffles to be opened when Sugar showers Geraldine with champagne-soaked kisses aboard a borrowed yacht.  The ‘Bombay Sapphire  Spray of the Sea by the Seminole Ritz Hotel’ accompanies the ladies’ arrival at the seaside hotel and the ‘Mini Hot Bourbon Bottle’ combines Bombay Sapphire with cinnamon, crème de Cacao and a dash of vanilla recreating a bourbon flavor, which is secretly swilled from a hot water bottle on the train journey."

Josh Pollen & James Murray's Sunday Lunch & Dinner at French & Grace in Brixton Village


Josh Pollen from Blanch & Shock & James Murray from Nur in Hong Kong are cooking a special Sunday lunch and dinner at French & Grace in Brixton Village on Sunday 29th December called 'Goodbye 2013'.  Perfect for the time between Christmas and the new year.  French & Grace is one of the best places in Brixton Village, but it's also one of the smallest, so tickets for this will go quickly.  Full booking details below.

"I am going to be cooking lunch and dinner at French & Grace in Brixton Village on 29th December with Jimmy Murray, formerly of Le Manoir aux Quat'Saisons, now of Nur in Hong Kong. There are going to be 5 courses, snacks, bread and butter and an optional drink pairing from French & Grace.
The menu is still being tweaked, but so far includes fried pork skins, pumpkin and hazelnut grain risotto, something amazing from The Butchery, herrings, tangerines and all sorts of other stuff."

When - Sunday 29th December - Lunch is from 12.30-2pm, dinner is from 6.30-9pm
